It’s everything I love about brunch. Nothing cures a hangover quiet like eggs benny and a beer. And if it’s on the menu, there’s really no other choice. I have to get it.

In my brief life, I’ve had good eggs benny, bad eggs benny, and eggs benny that makes you feel as if you’ve found the purpose and meaning of life itself (RIP Eggs Avondale. At least I have you, BSG Bad-ass Eggs Benedict).

In my neverending quest of the best eggs benedict (and the constant need to cure a hangover), I decided to take what I loved best about the dish and create my own personal spin on it.

Behold the Boxcar Benny – a bold take on the brunch classic.

Time You’ll Need

  • 20 minutes prep
  • ~ 15 minutes cooking
  • Serves 1

What You’ll Need

  • 2 eggs
  • 1 ripe avocado
  • ¼ cup of fresh-squeezed lemon juice
  • Half of an everything bagel
  • 1 precooked ham steak slice
  • 1 tbsp olive oil
  • Seasonings: Salt, pepper, cayenne powder
  • 1 minced garlic clove
  • 2/3 cups of warm water

What You’ll Do

  • Start with making the avocado ‘hollandaise’. In a small blender, add chopped avocado, salt and pepper to taste (meaning a lot of both), 1 tbsp olive oil, the lemon juice, the minced garlic, and 1 tsp of cayenne powder. Add the 2/3 cups of warm water and blend until smooth. Add to a saucepan and warm over low heat.

  • Next up, cook the ham steak on a skillet over medium high heat. Since it’s already cooked, you’ll just want to keep it on long enough to brown the edges (about a few minutes on each side).
  • Toast the bagel (and butter it if you’re feeling adventurous)  and add the ham slice on top.
  • For poaching the eggs (something I’m terrible at, which is a cruel twist of fate considering how much I love eggs benedict) I’ll refer you to this handy video that covers poaching excellently.
  • Once the eggs are cooked, place the two of them on top of the bagel and ham. Pour the warm avocado sauce over and enjoy. If you feel like dirtying every single pan in the kitchen like I did, serve with some breakfast potatoes for the full brunch experience.
Definitely need to work on plating and presentation.
