Boxcar Chicken Salad

This is another favorite of mine. It was also a staple during my impoverished days because of how cheap and quick you can make it.

Another perk? This baby is versatile. I made the one above with chipotle mayo, but don’t stop there. You can use regular old mayo and season it anyway you like. Another delicious version is to add some buffalo sauce to create buffalo chicken salad/dip.

You can season it with whatever you’re craving. Maybe try a little olive oil, plain mayo, and cracked black pepper?

Add a little BBQ sauce to the mix and you’ve got a quick pulled chicken deal going on.

Ingredients

  • 2 cans of 12 or 10 oz canned chicken
  • 5 tbsp mayo (can be flavored or plain)
  • 1/4 cup of onion
  • 1/4 cup of jalapenos
  • *Any seasonings (Red pepper, cayenne work great)

Instructions

  • 1. Drain the chicken.
  • 2. Chop the onions and jalapeno into small pieces.
  • 3. Add chicken, mayo, onion, jalapeno, and any seasonings to a bowl and mix it together real well. A simple spoon or fork will do the trick.
  • 4. The chicken will start to pull apart into small finer pieces the harder you stir, eventually it will blend together real nice.

See how easy that was? Now try and let it sit for an hour in the fridge to get all the flavors together.
Serve it however you’d like, on crackers, on toast with some cheese, or just eat it plain.
Remember to experiment with different flavors !
