Buffalo Chicken Meatloaf

Spice up your loaf of meat with Buffalo Chicken Meatloaf.

Meatloaf – a classic Sunday dinner meets buffalo wings – another Sunday gameday staple. With 2 pounds of lean ground chicken, an array of seasonings, buffalo wing sauce, and shredded mozzarella for some added cheesiness, this Buffalo Chicken Meatloaf is high-protein and full flavor. While ground chicken is a lot leaner than your ground beef meatloaf, the added wetness from the wing sauce, milk, cheese, and olive oil should help to keep your loaf nice and moist.

For serving, I’d recommend additional hot sauce, blue cheese crumbles for topping, or even a little blue cheese dressing for dipping. Pair it with other meatloaf classic comforts – like green beans and mashed potatoes. Or freshen things up with a side of fresh vegetables to enjoy with the blue cheese.

What You Need

  • 2 pounds of ground chicken
  • ½ sweet onion minced
  • 4 garlic cloves, minced
  • 1 cup of celery, finely chopped
  • 2 eggs, beaten
  • 1 ½ cups of panko breadcrumbs
  • ½ cup of milk
  • 1 ¾ cups of buffalo wing sauce
  • Black pepper, to taste
  • Salt, to taste
  • 1 tbsp garlic powder
  • 1/4 tsp cayenne pepper
  • ½ cup of finely shredded mozzarella
  • 1 tbsp Ranch seasoning
  • 1 tbsp buffalo seasoning
  • ~ 2 tbsp olive oil
  • Blue cheese or ranch for dipping

What You Do

  • In a skillet, heat one tablespoon of olive oil over medium heat. Add in onions and cook for about five minutes. Toss in minced garlic, and cook fora bout 3 more minutes. Set to the side and let cool.
  • Next, preheat the oven to 400 degrees.
  • In a large mixing bowl, add in onions, garlic, chopped celery. Then mix in ground chicken, cayenne pepper, salt, pepper, ranch seasoning, olive oil, shredded mozzarella, and breadcrumbs. Mix evenly.
  • Then mix in the eggs and milk.
  • Finally, add the buffalo wing sauce and mix a final time.
  • Transfer into a greased loaf pan. Bake for about 45 minutes, or until chicken is cooked through.
  • Remove and let cool before serving. Serve with extra buffalo wing sauce, blue cheese, or ranch.
