Cheesy Chorizo and Egg Oatmeal

As a kid, breakfast was sweet. Literally. Like you might as well just eat a spoonful of sugar sweet. And I went on living my life blindly believing in this false axiom. That breakfast – whether a sugary cereal or carbs coated in sticky syrup – was typically sweet, only occasionally savory. That is until I saw a better way.

You see, as you grow older – and your mornings are increasingly spent nursing a hangover – you start to crave savory meals. Salty fatty foods to bring you back to life the morning after. Eggs, bacon, sausages, American fries, and… oatmeal? 

It’s weird right? I’m a newly converted believer that oatmeal is better savory than sweet. You can keep your sweet, cinnamony, mapley mess. I’ll take mine with chorizo and eggs please.

It’s a hard sell at first. But just try it. It’s a cheap and quick breakfast with an endless amount of customization. You can throw in some bacon or classic breakfast sausage. Try it with different hot sauces and chicken. Hell even a little salt, black pepper and olive oil is delicious. Savory oatmeal is a beautiful new lease on life.

So let’s get down to it.

Time:

  • 10 minutes prep, 15-20 to cook.

What you’ll need:

  • 1 egg
  • Salt
  • Pepper
  • Olive Oil
  • 2 cups of non-instant oats
  • 1 Chorizo sausage (or protein of choice)
  • 1/3 cup of chopped onion*
  • 1/3 cup of chopped celery*
  • 1/3 cup of chopped carrot*
  • 1/2 cup of cheese of shredded gouda (or cheese of choice)
  • 1 chicken bouillon cube
  • Hot sauce of choice*

*optional

What you need to do:

  • Over medium heat, fill a pot with about 4 cups of water. Add a pinch of salt, bouillon cube, a pinch of pepper, and any chopped veggies.
  • Bring to a boil. While waiting, cut up sausage into little pieces.
  • Once boiling, add oats and sausage.
  • Cook over medium heat for about 5 minutes, stirring constantly. Salt this shit generously, because oats – like life without beer – can be bland and boring.
  • Whisk in the egg. Keep stirring.
  • Cook for another 5 minutes.
  • Turn off heat and add cheese and drizzle a teaspoon of olive oil. Add any hot sauce and enjoy.
