Chickpea fries w/ garlic Sriracha aioli

A *slightly* healthier take on classic French fries.

I love chickpeas. And I also love dive bar snacks. This recipe takes the best of both and elevates greasy French fries into a much more classier meal.

It does take a bit of time (about 1-2 hours of resting the fry dough in the fridge) so make sure to plan ahead!

Time You Need

  • 10 minutes for making fry batter
  • ~1-2 hours resting
  • ~10-20 minutes frying
  • Yields: ~30 fries

What You Need

For the fries:

  • ¼ cup fresh basil, finely chopped
  • 4 cups water
  • 2 1/2 cups chickpea flour
  • 2 tablespoons extra-virgin olive oil
  • 1 small white onion, minced
  • 4 garlic cloves, finely minced
  • 1 tbsp basil paste
  • 1 tbsp garlic paste
  • 1 tbsp Huy Fong Chili Garlic Sauce
  • ½ tbsp Salt, or more to taste
  • 2 tsp black pepper
  • 2 cups vegetable oil, for fryin

For the garlic Sriracha aioli:

  • ½ cup light mayo
  • 1 tbsp Garlic paste
  • 2 tbsp Huy Fong Chili Garlic Sauce
  • 2 tsp garlic powder
  • ½ tsp lemon juice

For the fries:

  • Grease a Pyrex 9 x 13 baking sheet.
  • In a small saucepan over medium heat, cook onions, garlic, and basil. Cook for about 5 minutes until onions are soft. Stir in chickpea flour, then add water, salt, pepper, garlic and basil paste, and Chili Garlic Sauce.
  • Reduce heat to low and whisk mixture until it forms a smooth, thick paste. Continue to whisk until there are no lumps left, about 5 or more minutes. Remove from heat then pour mixture into greased baking pan. Cover with plastic wrap or lid and place in the fridge. Let mixture sit in the fridge for 1-2 hours until it solidifies.
  • Remove from fridge and cut into fry shapes.
  • In a large saucepan, heat 2-3 inches (2 cups) of vegetable oil until it’s hot enough to fry the chickpea fries (about 350 degrees). Add a handful of fries at a time, and cook until the fries and a crispy golden brown on each side. Remove and place on a paper towel lined baking sheet, and repeat for the rest of the fries.
  • Season with more salt if desired, and serve with aioli.

For the aioli:

  • In a food processor, combine all ingredients and blend until mixed evenly. Serve with fries and enjoy!
