Elote-Style Popcorn  

Popcorn, perfected.

Elote has to be one of the best street foods ever invented. But what if instead of corn on the cob, you tossed all that flavor on a different form of corn? That’s the inspiration behind this recipe.  

All the flavor of elote in your bowl of popcorn. It features crumbled cotija, along with hints of lime and chili powder to spice up your next movie night. All that salty flavor can be perfectly quenched by a nice, ice-cold Mexican lager.  

Time You Need 

  • ~10 minutes total  
  • Yields: 2-3 servings  

What You Need 

  • 3/4 cup of popcorn kernels  
  • ~1 tbsp vegetable or canola oil  
  • ~2 tbsp butter 
  • Salt, to taste 
  • 1 tsp of taco bell taco seasoning 
  • 1 1/2 cups of crumbled cotija  
  • ½ cup of parmesan cheese 
  • ½ tsp chili powder 
  • 1 tsp lime juice  

What You Do 

  • Heat oil and pop your popcorn using your preferred method on the stove or with a popper.  
  • Melt the butter either on the stove or in a microwave safe bowl and stir in the taco bell seasoning and chili powder. 
  • Then pour butter over popcorn and toss to mix. Add in the parmesan, crumbled queso fresco, and lime juice. Continue to toss popcorn until well mixed. Then serve and enjoy!
