Garlic Bread Grilled Cheese

A simple way to up your grilled cheese game.

Garlic bread is great. Grilled cheese? Also great.  So why not combine them into the ultimate rainy day comfort food garlic grilled sandwich.  

It’s a simple recipe that uses garlic, olive oil, butter, and fresh parsley to create a savory spread for the toast and then adds shaved parmesan and mozzarella to create a grilled cheese unlike any other.  

Time You Need 

  • Prep: 5-10 minutes 
  • Cooking 10 minutes  
  • Yields: Two grilled cheese  

What You Need 

  • 4 slices of Texas toast or brioche bread (or I guess some fancy whole wheat shit, but it never tastes as good)  
  • ~2 tbsp crushed garlic  
  • 1 tbsp minced garlic  
  • 2 tbsp room temp butter 
  • 1 ½ tbsp olive oil 
  • 1 tsp garlic powder  
  • 1 tsp Italian seasoning  
  • ~1-2 tbsp Fresh parsley, chopped 
  • 4 slices of mozzarella or provolone (2 slices per sandwich) 
  • ~1 cup of shaved parmesan cheese (½ cup per sandwich)  

What You Do  

  • Combine crushed garlic,  minced garlic, olive oil, and butter in a microwave-safe bowl and heat till butter is melted (~1 minute). Or use a small saucepan to melt butter over medium-low heat.  
  • Stir in garlic powder, Italian seasoning, and chopped parsley and let simmer on low heat for about 5 minutes.  
  • Evenly brush the mixture on all sides of each piece of bread. 
  • Place mozzarella and shredded parmesan on bread, then combine with another slice to form the sandwich.  
  • Repeat for second grilled cheese.  
  • Cook on a heated skillet over medium heat for about 3-4 minutes on each side, or until golden brown. 
  • Serve (with wine!) and enjoy!
