Jalapeno Popper Chicken Lettuce Wraps

Can jalapeno poppers be healthy? Probably not. But we can pretend they are with these chicken jalapeno popper lettuce wraps.

They’re easy. They’re delicious. And you can have them either as a cold wrap or grill the romaine lettuce first for the perfect no-fuss summer snack.

Time You’ll Need

  • 15 minutes prep
  • Yields: 14-15 wraps

What You’ll Need

  • 3 cans of white chicken breast
  • ~3.5-4 oz cream cheese (room temp)
  • 3 heads of romaine lettuce
  • Salt, to taste
  • Pepper, to taste
  • 1 cup of diced jalapeno
  • ½ tsp cayenne pepper

What You’ll Do

  • Drain and dry the canned chicken and wash the romaine lettuce.
  • In a large bowl, add the canned chicken, room-temp cream cheese, salt and pepper, cayenne, and diced jalapenos. Using a fork, shred the chicken and mix evenly until it begins to look like chicken salad.
  • Peel individual leaves from romaine and stuff about ~2 or more hearty spoonfuls of the jalapeno popper chicken mix inside each leaf.
  • *If grilling, grill the head of romaine lettuce first. Get a good grill char all around then remove from grill, peel leaves and stuff with jalapeno popper chicken mix.
