The jalapeno popper madness continues.
At this point, what can’t you turn into a jalapeno popper inspired dish? As one of my favorite flavor profiles, it’s so much fun to experiment with. This sandwich uses a chick-fil-a inspired fried chicken breast coated in jalapeno flavored chips, then slathered in a cream cheese and jalapeno sauce. It’s not pretty and gets messy, but good god is it delicious.

Time You Need
- 30 minutes prep
- ~25-30 minutes cooking
- Yields: 4 sandwiches
What You’ll Need
- 4 thinly sliced boneless chicken breasts (or thighs)
- ~6 oz Jalapeno flavored chips
- 4 Hamburger/Sandwich buns of choice
- 2 beaten eggs
- ~1 – 1 1/2 cups of flour
- Pickles (for serving)
- Shredded cabbage or coleslaw (for serving)
- 2 cups of pickle brine
- ¼ cup of milk
- Salt, to taste
- ½ tsp black pepper
- ½ tsp cayenne pepper
- 1 tbsp garlic powder
- ½ tsp chili powder
- 2 ½ cups of vegetable oil (for frying)
- For the jalapeno popper sauce:
- 1 cup diced jalapeno
- 3 oz cup cream cheese
- 1/2 cup chicken stock
- ½ cup of milk
- 1 tbsp flour
- Salt and black pepper to taste
- 1 tbsp olive oil
WHAT YOU’LL DO
- Cover chicken breasts with plastic wrap. Using your fist or a tenderizer, beat chicken breast to tenderize and soften.
- In a plastic bag or covered bowl, marinate the chicken in the pickle juice brine. Refrigerate and let sit for half an hour.
- In a large gallon size ziploc bag, place the jalapeno flavored chips and smash to a fine powder.
- In a large skillet, heat 2 cups of oil over medium-high heat.
- Create a dredging station for chicken. One bowl of beaten eggs and milk, one bowl of flour (+ cayenne, salt, black pepper, garlic powder, and chili powder, and one bowl/bag for the jalapeno chip powder.
- Starting one at a time, dunk chicken in flour, then eggs, then the chip powder coating.
- Fry on a skillet, about 4-5 minutes on each side, until golden brown and cooked all the way through.
- Place and a plate lined with paper towels. Repeat for the rest of the chicken breasts.
- Serve on a toasted bun with pickle slices, sliced cabbage or slaw, and the popper sauce!
- For the sauce:
- In a saucepan, heat the olive oil cook the diced jalapeno for about 2-3 minutes.
- Then add milk, cream cheese, chicken stock, and salt and pepper to taste.
- Stir until the cheese is melted and forms a smooth consistency. Stir in the flour to thicken the sauce. Stir until it’s fully incorporated, then let simmer for a few minutes. Pour over chicken sandwiches and serve.
