All the flavors of a jalapeno popper inside a quesadilla.
The jalapeno popper craze continues. And every day we get nearer to my dream of opening up a restaurant called Poppers. Which serves only food designed around the delicious flavors of cream cheese and jalapeno.
As of today, we can add the quesadilla to our ever-expanding list.

Time You Need
- Prep: ~5 minutes
- Cooking: ~20 minutes
- Yields 3 Quesadillas
What You Need
- 1 ½ cups of diced jalapeno (canned)
- 2 12 oz cans of chicken, drained
- 6 oz room temp cream cheese
- 6 tortillas
- 1/2 tsp cayenne pepper
- ½ tsp garlic salt
- 1 tbsp mayo
What You Do
- Preheat oven to 450.
- In a large mixing bowl, combine chicken, cream cheese and diced jalapeno and seasonings. Mix together thoroughly to form a sort of chicken salad consistency.
- Then spread evenly over three tortillas. Top each tortilla with another tortilla to form the quesadilla.
- Place quesadillas on 1-2 greased baking sheets. Cook for about 20 minutes at 450, or until golden brown. You can also broil on high for the last five minutes or so to achieve a crispy crust quicker.
- Slice up, serve, and enjoy!
