Jucy Lucy Black Bean Burger

I’m on a mission to turn every regional burger style into a bean burger. This recipe takes the Minnesotan Jucy Lucy – a traditional burger stuffed with cheese – but uses beans instead of beef and is stuffed with fresh Wisconsin cheddar cheese curds.

If you want a true vegan/veggie experience, forgo the egg and mayo, and add a tbsp or two of olive oil. And swap out the cheese curds for cashew cheese substitute. And for a gluten-free version, leave out the oatmeal and bread crumbs and replace with about 1-1 ½ cups of ground flax seed.

  • ~25 minutes cooking
  • Yields: 4 patties

What You Need

  • 1 can of black beans, drained and dried
  • 1 can of red kidney beans, drained and dries
  • 1 cup of oatmeal
  • ½ cup of breadcrumbs
  • ½ cup diced sweet onion
  • 1 tbsp mustard
  • 1 tbsp ketchup
  • 1 tbsp mayo
  • Salt, to taste
  • 1 egg, beaten
  • ½ tsp black pepper
  • ½ tsp cumin
  • 1/2 tsp chili powder
  • 1 tsp smoked paprika
  • 2 tbsp minced garlic
  • ½ tsp dried basil
  • ~12 cheese curds
  • 1 tbsp olive oil
  • *Any buns and hamburger toppings you prefer

What You Do

  • Preheat oven to 350.
  • In a mixing bowl, mash black beans and kidney beans to form a paste.
  • In a skillet, over medium heat, add olive oil and cook onions and garlic for about five minutes.
  • Remove from heat, and add garlic and onions to the bean mixture. Then add beaten egg, oatmeal, breadcrumbs, ketchup, mustard, and all your seasonings.
  • Mix thoroughly. *optional* refrigerate for 30 minutes to dry out the paste and make it easier to work with.
  • Take a handful of the mixture to start forming a patty. Take cheese curds and stuff inside and enclose patty. Repeat steps until finished.
  • Place finished patties on a greased, foil lined baking sheet. Cook burgers for about 20 minutes, making sure to flip burgers halfway through.
  • Serve with preferred hamburger toppings.
