A cheese curd stuffed bean burger.
I’m on a mission to turn every regional burger style into a bean burger. This recipe takes the Minnesotan Jucy Lucy – a traditional burger stuffed with cheese – but uses beans instead of beef and is stuffed with fresh Wisconsin cheddar cheese curds.

If you want a true vegan/veggie experience, forgo the egg and mayo, and add a tbsp or two of olive oil. And swap out the cheese curds for cashew cheese substitute. And for a gluten-free version, leave out the oatmeal and bread crumbs and replace with about 1-1 ½ cups of ground flax seed.

What You Need
- 1 can of black beans, drained and dried
- 1 can of red kidney beans, drained and dries
- 1 cup of oatmeal
- ½ cup of breadcrumbs
- ½ cup diced sweet onion
- 1 tbsp mustard
- 1 tbsp ketchup
- 1 tbsp mayo
- Salt, to taste
- 1 egg, beaten
- ½ tsp black pepper
- ½ tsp cumin
- 1/2 tsp chili powder
- 1 tsp smoked paprika
- 2 tbsp minced garlic
- ½ tsp dried basil
- ~12 cheese curds
- 1 tbsp olive oil
- *Any buns and hamburger toppings you prefer
What You Do
- Preheat oven to 350.
- In a mixing bowl, mash black beans and kidney beans to form a paste.
- In a skillet, over medium heat, add olive oil and cook onions and garlic for about five minutes.
- Remove from heat, and add garlic and onions to the bean mixture. Then add beaten egg, oatmeal, breadcrumbs, ketchup, mustard, and all your seasonings.
- Mix thoroughly. *optional* refrigerate for 30 minutes to dry out the paste and make it easier to work with.
- Take a handful of the mixture to start forming a patty. Take cheese curds and stuff inside and enclose patty. Repeat steps until finished.
- Place finished patties on a greased, foil lined baking sheet. Cook burgers for about 20 minutes, making sure to flip burgers halfway through.
- Serve with preferred hamburger toppings.
