Peach Pepper Salsa

A summertime salsa with loads of flavor.

Inspired by the flavors of our local farmers’ market, here’s a new twist on salsa that’s filled with refreshing flavor to balance peppery bite.

The fresh peace salsa incorporates fresh tomato, bell peppers, and roasted hatch chili peppers, and of course, the star of the show, big chunks of juicy peaches, along with a hint of honey and brown sugar. Each bite carries an explosion of fresh summertime flavor. The salsa works well on its own, as an appetizer, or as a nice taco topping.

If you’re not familiar with roasting peppers – or simply need a refresher, follow these similar steps from my tri-chili queso recipe used on the southwestern sloppy joes. As for the peaches, you don’t have to skin them. It’s up to you if you like the texture. If you do, I’d recommend a quick boil and blanch method to peel the skins right off. Toss the peaches in a pot of boiling water for about 10-20 seconds, just until the skin splits. Then carefully spoon them out and put them in a bath of ice water to cool. Wait till they are cool to touch and the skins – much like the roasted and steamed peppers – slides right off.

What You Need

  • 4-5 peaches, peeled, pitted and cubed
  • 2 large tomatoes, diced
  • 1 roasted bell pepper, seeded and diced
  • 1-3 Hatch chili pepper, roasted and seeded and diced
  • ½ yellow onion, chopped
  • ¼ cup of honey
  • 1/8 cup of apple cider vinegar
  • ½ cup of water
  • 1 tbsp brown sugar
  • 1 tsp lemon juice
  • ½ tsp salt
  • 1 tsp chili powder
  • *chopped cilantro (optional)
  • Tortilla chips for serving

What You Do

  • Start by adding the water to a small saucepan, along with brown sugar and honey. Bring quick boil to dissolve the sugar. Then remove from heat and set to the side.
  • Next, in a large bowl add the diced tomato, peaches, and peppers. Season with salt, chili powder, and lemon juice. Then stir in apple cider vinegar.
  • Next, add the sugar/honey water. Mix everything together evenly.
  • Place in the fridge and let sit for 30 minutes, then serve and enjoy!
