Quick Berry Crumble

The best way to beat those winter blues? Try something warm, cinnamony, and sweet. While this recipe isn’t really a classic crumble (it’s not a crumble at all really, I’m sorry I lied. I just felt like the name really rolled off the tongue so it stuck. Say it. Quick Berry Crumble. See? ) it’s lot quicker to make than a crumble. And that’s always a good thing when you need to warm up fast.

A highly important serving suggestion: Pair with a tawny port.

The two main parts of the process are baking the granola and then boiling the berries. And I promised it would be quick, so let’s start now.

Time it takes: Granola will be about 10 minutes of prep, 30 minutes of cooking.
Berries: 2 minutes of prep and ~10 minutes to cook.

What you’ll need:

  • 5 cups of frozen mixed berries
  • 1 cup of orange or apple juice
  • 1/2 cups of honey
  • 3 cups of rolled oats
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 tbsp brown sugar
  • 1/2 tsp of salt
  • 1/4 cup of vegetable oil
  • 1/3 cup of lemon juice

Let’s start with the granola.

Granola
It’s a basic granola recipe, but don’t let that limit your imagination. Throw in whatever you usually like with your granola – nuts, seeds, etc.

What to do:

  • Preheat oven to 300 degrees.
  • In a large bowl mix together oats, cinnamon, brown sugar, and salt.
  • In a separate bowl, mix 1/4 cup of honey, vanilla extract, and vegetable oil.
  • Pour the mixture of honey, vanilla, and oil slowly and evenly over the oats. Mix everything together.
  • Spread the oats in a thin layer over a greased baking sheet.
  • Bake them for 15 minutes.
  • Take them out and stir them up and bake for another 15 minutes until golden brown.

While the oats are cooking you can also get started on the berries.

For that:

  • In a pot over medium heat, add 1/4 cup of honey, the 5 cups of frozen berries, the orange (or apple juice) and lemon juice.
  • Stir constantly while bringing it to a boil.
  • Once it starts to boil turn the heat down, let it simmer for a 3-5 minutes before transferring to the fridge to cool a bit.

To Serve:

Pour the berries over a bowl of the oats, stir it up and enjoy. I would also point out you could serve it with ice cream, but isn’t that kinda obvious?
