Sausage Bread

A sausage, cheese, and pepper packed loaf of savory bread.

It’s like a calzone. It’s like stromboli. Whatever it is, it’s fucking delicious. Using pizza dough as the base, the sausage bread is filled with spicy Italian sausage, diced onions and peppers, and two types of cheeses — classic mozzarella and a creamy ricotta. It’s perfect for slicing up into handheld bites and dipping in your favorite marinara.

Time You Need:

  • Prep: ~15 minutes
  • Cooking: ~40 minutes
  • Yields: one sausage bread?

What You Need:

  • 1 ball of pizza dough, store-bought or homemade (and get to room temp)
  • 1 lb. of ground spicy Italian sausage
  • 1/2 cup shredded mozzarella
  • 1 cup ricotta cheese
  • 1 tbsp dried Italian seasonings
  • 2 diced bell peppers
  • 1 tsp black pepper
  • 3 tbsp minced garlic
  • 1 diced onion
  • ~ 1 tbsp Olive oil
  • 1 beaten egg
  • 1 diced bell pepper
  • Salt to taste

What You’ll Do

  • Start by heating the oven to 350.
  • Line a baking sheet with foil and grease.
  • In a large skillet, add a tbsp of olive oil, some salt (to taste) and cook ground sausage over medium heat. Cook until brown on both sides and no pink remains, about 7 to 10 minutes. Remove from the pan and let cool. Drain excess grease, then keeping the over medium heat add peppers, garlic, and onions. Cook until soft, about five minutes.
  • Remove from heat and let cool.
  • Roll dough out into a rectangle.
  • Add a hearty layer of ricotta cheese, smoothly spread over the dough.
  • Then scatter sausage, peppers, onion, and garlic.
  • Season with salt, black pepper, and dried Italian seasonings.
  • Add a thin layer of mozzarella cheese on top of everything.
  • From one end, roll the dough jelly style, carefully making sure to tuck in the ends to prevent any leaks.
  • Pinch and seal the dough to form the loaf.
  • Place on foil-lined baking sheet and brush with beaten egg. Season the top with any extra seasonings.
  • Bake for around 30 minutes, or until a crispy golden brown.
  • Remove from oven and let rest for about 10 more minutes. Serve with marinara and enjoy!
