Steak Tacos w/ Pineapple

Simple steak and pineapple tacos.

I was inspired to make steak tacos after a much-needed trip to San Antonio, where I ate copious amounts of delicious food. 

I  didn’t realize the city was a culinary mecca. And it’s not all just Tex-mex and bbq (but it also is great for both those things). Thanks to the Culinary Institute of America campus, coupled with the passion for good food that the people of San Antonio have, I was in foodie heaven here. Restaurant after restaurant offered unique and delicious meals to try.  

Now that I’m back home in a sun-starved Wisconsin, I wanted to replicate some of the great local flavors. This steak and pineapple taco recipe is all about simplicity. I purposely left the seasoning amounts open to taste, so season with as much or little as you’d like. Other than that, it’s as easy as cooking up some steak and sautéing pineapples and you’ve got yourself a perfect summery steak taco. 

What you need

  • ~25 minutes prep  
  • ~20 minutes cooking  
  • Yields: 4-6 tacos  

What You Need 

  • 1.5 pounds of skirt or flank steak 
  • ~20 oz pineapple 
  • 4 limes  
  • Chili powder (to taste) 
  • Salt (to taste)  
  • Cumin (to taste)  
  • Pepper (to taste)  
  • 1 cup diced red onion  
  • Cilantro (for topping)  
  • Tortillas  (corn or flour)

What You Do 

  • In a large skillet, heat oil over medium heat. Season steak with some salt, pepper, cumin and chili powder.  
  • Cook steak for about 10 minutes on each side (or longer to achieve desired wellness).  
  • In a separate skillet, sauté pineapples and red onion with lime juice from the four fresh squeezed limes, a little salt and pepper and chili powder (to taste). Cook on medium heat for about 10 minutes.  
  • Once steak is cooked, slice into thin strips.
  • Serve over warm tortillas with pineapple and onion. 
  • Top with cilantro and more lime juice.  
  • Enjoy!
