The chickpea salad spread is a lot like chicken salad.
And it makes a great sandwich spread. It’s cheap. It’s delicious. Probably healthy (?). And extremely customizable to your tastes.
In other words, it’s the perfect weekday meal when you’re running on a busy schedule.
The recipe here includes a “classic” style, which is to say it follows along the ingredient line of a basic chicken salad. I’ve also included some options for spicing it up a bit.

What You’ll Need:
Basic Recipe:
- 1 can of chickpeas drained and rinsed
- ¼ cup relish, or diced pickles
- ½ cup sweet onion finely chopped
- ½ cup green onions, chopped
- 2 tbsp of your choice of mayo
- ~1 ½ tsp apple cider vinegar
- Salt (to taste)
- Black pepper (to taste)
- 1 tsp lemon juice
- 1 tbsp minced garlic
Specialty Recipes:
(Feel free to add one of the following bullets to the above recipe for some added flavor)
- ~1 ½ tbsp of stone ground mustard.
- 2 tbsp of chipotle adobo sauce (throw in some some diced chipotle peppers and swap the lemon juice for lime for a chipotle lime sandwich spread. This is the recipe used in the above pictures).
- 2 tbsp of buffalo sauce for a buffalo chicken inspired sandwich spread.
What You’ll Do:
- In a large mixing bowl, mash the chickpeas to create a rough paste.
- Then add the rest of the ingredients. Mix together well. Season to your taste.
- Serve on a piece of toast with cheese.
