Chipotle Lime Hummus

Hummus is great on its own. But it’s even better when you add some smoky chipotle flavor.

I remember when I tried my first bite of hummus ever. It was at my favorite restaurant in college, One World. Over some long islands and pitchers of sangria with my future wife, we shared a large bowl of their original recipe hummus and some toasted pita bread. I was hooked ever since.

 

One of the things I loved about hummus is how versatile it is. You’ve got garlic hummus, roasted red pepper hummus, sun-dried tomato and basil hummus, chipotle and lime  — I mean, the list goes on. The other thing I love about hummus is how easy and cheap it is to make at home. And the third thing I love about hummus is that it’s a meal meant to be shared. It’s the perfect plate to have as the centerpiece to a table of good friends, good drinks, and good stories.

 

So if you are looking for something cheap, easy, and full of flavor to share with your friends or family, this chipotle lime hummus is a must. Feel free to adjust the number of chipotle peppers used to get your preferred heat level.

Time You’ll Need

  • 15 minutes
  • Yields: About 1-2 servings for 2 people

What You’ll Need

  • 1 Lime
  • 1 can of chickpeas drained and rinsed
  • 1-2 chipotle peppers, finely diced (depending on how much heat you want)
  • 1 tbsp adobo sauce
  • 1 tsp Cumin
  • Salt and pepper (to taste)
  • 2 tbsp olive oil
  • 2 tbsp  minced garlic
  • Pita bread or chips (For serving)

What You’ll Do

  • Add chickpeas, chipotle peppers, adobo sauce, olive oil, cumin, garlic, salt and pepper into a food processor. Squeeze the lime over ingredients.
  • Blend everything to a smooth paste (add a bit of water if needed to make the mixture creamier if needed)
  • Pour the hummus out into a bowl to serve. If desired, top with additional chipotle peppers, a little olive oil or adobo sauce, and another squeeze of lime juice. Serve with pita or oven toasted naan.
