Garlic Basil Pan Chicken With Brussels

A delicious dinner feast!

Basil Garlic Pan Chicken

 

All cooked in a single skillet. This recipe includes some savory cuts of chicken cooked over a bed of garlic and basil slathered Brussel sprouts, green peppers, onions and of course po-tay-toes.

 

 

For smaller portions, you don’t have to cook as much chicken as I did. But it makes a great Sunday dinner that lasts you all week long.

 

Note: Because of the savory flavors involved, this recipe is best enjoyed with copious amounts of red wine.

Time You’ll Need

What You’ll Need

For the chicken:

  • 5 chicken drumsticks
  • 3 chicken thighs
  • 3 tsp dried Italian seasoning
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 2 tsp garlic powder
  • 2 tbsp olive oil + extra for frying
  • 2 tbsp balsamic vinegar
  • 1 tbsp garlic paste
  • 2 tbsp minced garlic
  • 2 tbsp basil paste

For the sides:

  • 3 diced red potatoes
  • 1 pound of Brussel sprouts
  • ½ cup diced yellow onion
  • 2 tsp dried Italian seasoning
  • 1 chopped green pepper
  • 1 tsp black pepper
  • 2 tsp garlic powder
  • 2 tbsp garlic paste
  • 2 tbsp basil paste
  • ~ 1 1/2 tsp salt (to taste)
  • 3 cloves of minced garlic
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar

What You’ll Do

  • Preheat the oven to 400 degrees.
  • Start by boiling the Brussel sprouts in a medium pot. Boil for about 5 minutes, until they are soft then remove from heat (For softer potatoes, you can also boil those for about 5 minutes).
  • Add the boiled sprouts to a large bowl, along with diced potatoes, diced onion, minced garlic and green pepper. Stir in garlic and basil pastes, olive oil, vinegar, and all the seasonings listed under the sides list.
  • In another large mixing bowl, combine the chicken, 2 tbsps of olive oil, vinegar, garlic and basil paste, minced garlic and all the seasonings listed under the chicken portion. Mix thoroughly.
  • Next, brush a layer of olive oil over cast iron skillet. Heat over medium-high heat and place chicken pieces on the skillet. Brown both sides of each piece of chicken.
  • Once each side is browned, transfer the chickens to plate. Add all your sides to the skillet, then place the chicken over the top of all the sides.
  • Cover the skillet with tin foil. Place the skillet in the oven and cook for about 45 minutes, then remove foil, and cook for about another 15 or until chicken is fully cooked.
  • And remember, enjoy with red wine.
