Ketchup Batch #001

Why homemade ketchup? What’s the point?
Won’t regular ketchup just do?

Yea. But regular ketchup is so boring. So bland. And when I was thinking about what to top my homemade meatloaf with, I began searching beyond boring old ketchup for something a bit bolder.

In my search I learned that making your own ketchup is actually an easy, quick, and fun process. Not boring at all. And you get a lot of control over the flavors. Which is perfect, because I wanted a lovely red dressing for my meatloaf, not just any old condiment.

So here’s my recipe. It’s a little sweet & a lot of spicy. And while it’s my first run at homemade ketchup, I’d definitely see myself experimenting with it in the future (my first batch was too sweet, so in this recipe I upped the vinegar, while toning down the brown sugar).

How long: 15 minutes cooking, 0 prep.

This is in my top 5 favorite condiments.

What You’ll Need:

  • 12 oz of tomato paste
  • ¼ cup of brown sugar
  • ¼ tsp ground mustard
  • 1 tsp garlic salt
  • ¼ tsp cinnamon
  • ½ tsp cayenne pepper
  • ½ cup of water
  • 1 ½ cups of white vinegar
  • 1 tbsp Chili Garlic Sriracha sauce

What You’ll Do:

  • Add all ingredients into a small pot.
  • Stir everything together over medium heat.
  • Let it sit and get to a slight, low boil.
  • Turn heat down to a low simmer.
  • Let it sit covered for about 10-15 minutes. Stirring occasionally to prevent it from sticking/burning at the bottom.
  • After simmering for about 15 minutes, let it cool, then transfer to an airtight container and sit overnight in fridge.
