Love cooking around the campfire? Here’s our easy quick fix for delicious camping dinner. It can be prepared in advance, letting you throw it on the grill or over a fire and leaves you time to get the rest of your campsite set up.

This boxcar special is a lot like a hobo hamburger, but uses lots more veggies and sausage instead of ground beef. Here are the instructions and ingredients, as provided by Kristin.

Time You’ll Need:

  • ~20 minutes prep
  • ~30-45 minutes
  • Serves 4 people, makes two large packets

What You’ll Need:

  • ½ large yellow onion, chopped
  • 2 bell peppers, chopped
  • 2 cups of green cabbage, chopped
  • 2-3 red potatoes, diced
  • 3 tbsp olive oil
  • 3 sausages of your choice, chopped
  • Salt & pepper to taste, as well as your choice of other seasonings

What You’ll Do:

  • After chopping and prepping everything, lay down two large pieces of tin foil to create a bowl that wraps over the ingredients. You can also double wrap the ingredients in foil to make it stronger.
  • Place the potatoes down first, salt and season them.
  • Add the onions, peppers, and cabbage. Salt and season again.
  • Drizzle the olive oil over the ingredients, then place the sausages over the veggies. This way the juices will drip down over everything.
  • Fold the foil over the ingredients to create a packet. Use an extra piece of foil if needed to fully cover everything.
  • Place the foil packets over a fire pit or charcoal grills.
  • Let them sit for about 30-45 minutes.
  • To check if everything is cooked, cut a hole in the top of the packet and check the veggies. You’ll want the potatoes and veggies to be soft.
  • When finished, remove from fire, remove the top layer of foil and let them cool for five minutes. Then you can eat straight out of the packet for an easy clean up no mess meal.
